Firstly, I wanna apologize. I know this post is a little bit delayed but it all  happened for good reasons as I had kind of an emergency last week. But we’re back in business now. With a failed cupcake recipe. WHUPWHUP. And yes, I know how it sounds but let me explain it to you. So, I decided to write a post about my favourite vanilla cupcakes recipe as it is the simplest one and you can play and diverse the frosting or the decorations as you want. You can do practically everything with a vannilla cupcake. All done. I made the mixture, made sure I try to capture every step for you, not to mess it up and to taste good. But… when it was time for me to prepare the cupcake tray, I couldn’t find it anywhere. When it all clicked. I left my tray at my parents apartament. So, I was there, in the kitchen, with my cupcake mixture , no baking tray and no keys from my parents apartament. As you can imagine I had to come with a quick solution because I wasn’t gonna throw all the mixture in the bin all just because I forgot my tray somewhere else. Initially, I was going to change the post and pick another topic to talk about and try to remake the recipe again next week. But then I thought ” you know what ?! ” this is what really happened and I think the result is not that bad as it is a good alternative for a tea/coffee cake and honestly  it tastes amazing. Therefor  I am gonna be honest and tell you how I turned my cupcakes into a cake.

The recipe I used is obviously not mine, I took it from a website like anybody else does and it is soo simple and soo quick. Without further ado, you will need :

Ingredients :
  • 115 g room temperature butter
  • 130 g sugar
  • 3 eggs
  • 1 vanilla extract
  • some lemon peel (optional)
  • 210 g flour
  • 1 1/2 teaspoon baking powder
  • a pinch of salt
  • 60 ml milk
To decorate :
  • 100 gr chocolate
  • coconut
  • Raffaello ( optional )
How to do it :

Before you start preparing your mixture, make sure you pre-heat the oven at 180 degrees Celsius.

 Then you can start by mixing the sugar ( I used brown sugar so that it doesn’t get too sweet ) with the butter until it has a smooth and creamy consistency. After that you can put away your mixer/whisk because you’ll work just with a wooden spoon. You’ll the have to incorporate the eggs one by one, making sure you mix everything well after each one. You now have to add the lemon peel, the vanilla extract,  flour, baking powder, a pich of salt and then you need to mix them from the bottom to the top until you incorporate all the ingredients. The last step is to add the milk slowly and mix until is done.

Now it should be the time to get your cupcake tray ready but because I haven’t got one I just decided to put the mixture in a round cake tray covered in butter and a little bit of flour, just to make sure it won’t get burned. Put it in the oven for about 15-20 min.

In the meantime you can start melting chocolate. I wanted my cake to be covered in chocolate and coconut but it all up to you and what you love on top of your desert.

 Once your cake is completely cooled ( sorry for the gap in the picture, I was just making sure it was well cooked ) , pour the melted chocolate and once it is settled, pour as much coconut on top of it as you like. I went kinda crazy because I just love coconut.

Now it is time to decorate the cake and get creative. I am not an expert on decorating cakes or desert in general and I didn’t have much of a choice at home to work with but I decided to slice my cake in 8 big slices and put on the edge of each one a Raffaello bomb just to add a different flavour at the end. Then  all you have to do is to let it cool in the fridge. Once the chocolate is hard and the coconut is not moving around your cake, you are actually done.

A very tasty, easy and quick desert wich, if you ask me turned out pretty well. I recommend you to try it with some coffee/tea or with any other drink you fancy.
So this is it guys. This is how I’ve saved my cupcake mixture and turned it into a cake.
